We left home “Adelaide” 6 long years ago, feels like forever to be honest. Our bank accounts had a big $200, plus enough money to pay for our first 2 weeks of rent in Melbourne. Sharing a room at 24 years old wasn’t ideal but to save some coin, it was the only option. So we jumped into our little red ford and drove 9 hours to Melbourne. This is where the pancake recipe was created. Thinking outside the box, and trying to budget our weekly grocery shop, these pancakes were invented! All you need is a bowl, fork, non-stick frying!
1 ripe banana
1 organic egg, lightly whisked
1 teaspoon cinnamon
1/4 cup almond meal
Freeze dried strawberries or fresh
- Mash the banana and add to a mixing bowl. Add the egg, cinnamon, almond meal to the mixing bowl and mix to combine into a batter.
- In a non-stick frying pan, add 1 teaspoon of coconut oil. Add 3 tablespoons on mixture to the heated pan and fry on each side for 2-3 minutes or until golden.
- Serve with honey, peanut butter and strawberries.
