Beef and Pumpkin stew

Ingredients
500g Australian Beef rump steak, cut into 2cm pieces
1 tablespoon olive oil
1 brown onion, diced
1 tablespoon smoked paprika
1 small red capsicum, thinly sliced
100g pumpkin, cut into small cubes
400g tinned chopped tomatoes
400g kidney beans
100g green beans, trimmed
2 x 250g microwave Jasmine rice
Method
- In a large deep pot, add the olive oil and onion and sauté till translucent. Add the beef and smoked paprika, cook for 5 minutes.
- Add the capsicum, pumpkin, tomatoes and beans and add 1 cup of water, cook on medium heat for 20 mins or until the pumpkin is soft.
- Add the green beans and cook for a further 5 minutes, serve with jasmine rice.
