Peanut Butter and Jam cookies
Makes 22 cookies
125g unsalted butter, softened
1/2 cup raw sugar
1 egg, (free-range or organic if possible)
1/2 cup peanut butter
1 teaspoon maple syrup
1 1/2 cup plain flour
1/4 teaspoon baking powder
Jam for the center (raspberry or strawberry)
- Preheat the oven to 160°C. Line 2 baking trays with baking paper.
- Use an electric mixer to beat the butter and sugar until pale and creamy, then add the egg and beat until just combined. Add the peanut butter and maple syrup and beat to combine.
- Fold through the flour and baking powder. Roll tablespoons of batter and press your thumb into the cookies. Fill the thumb hole with jam of your choose (we love raspberry jam).
- Bake the cookies for 13-15 minutes and then…….. eat them all in one sitting. We don’t judge here.
